I love Cheesy Potatoes, and you can understand from the name that today I am going to share 2 recipes with cheese and potatoes. One is the slow cooker recipe, and it takes time around 4 hours. So, while cheese potato with mushroom is being cooked, you can finish all your essential work just as I do. The outcome is heavenly.
And another is the baked potatoes with loads of cheese and bacon. This thick and creamy dish will give you a punch of flavors in your mouth. Both of these recipes are perfect for a potluck or any party. Make them in any season, and they will become hit among the masses instantly.
Cheesy Potatoes With Mushroom
Preparation time – 15 minutes
Cooking time – 4 hour
Ingredients
- Olive oil – 2 tbsp
- Butter – 1 Tsp
- Cheddar cheese – 4 cups, shredded
- Mushrooms – ½ pound, cut into slices
- Potatoes – 5, large, cut into quartered pieces
- Onion paste – ¼ cup
- Milk – ½ cup
- Garlic salt – 1 tbsp
- Butter – 2 tbsp
- Black pepper powder – ¼ tsp
Directions
- Take a skillet and add the olive oil. Once the oil is hot, add the sliced mushrooms and fry till they are golden in color.
- Now take a large size slow cooker and add the milk, onion paste, garlic salt, fried mushrooms, potatoes, cheese, 2 tbsp of butter and pepper powder. Let them cook for about 4 hours on high so that the potatoes become soft and the cheese melts.
- When done, sprinkle some fresh parsley and have it. The gooey potatoes will give you a blissful taste in your mouth.
Baked Cheesy Potatoes With Bacon
Preparation time – 25 minutes
Cooking time – 40 minutes
Ingredients
- Bacon slices – 8, cut into pieces
- Russet Potatoes – 4 pounds, cut into cubes
- Sour cream – ¾ cup
- Butter – 1/3 cup
- Heavy cream – 2 tbsp
- Cheddar cheese – 1 ¾ cups, shredded
- Garlic – 2 cloves, minced
- Chives – handful, for garnishing
- Salt and pepper – as required
Directions
- Take a pot and fill half of it with water. Add the potatoes and cook them till all the potatoes become soft. When done, remove the excess water.
- In a skillet, add the pieces of bacon and let them cook till they become crispy. When done, take them out on a kitchen towel.
- Now in a bowl, mash the soft potatoes. You can do it by your hand, or you can use a masher. Mix the sour cream, salt, and black pepper powder, minced garlic, 1 cup of cheddar, butter and heavy cream with the mashed potatoes. Add most of the cooked bacon in it and mix again.
- Take a baking dish and pour this mashed potato mixture in it. Add the leftover cheese and bacon on the top.
- Preheat the oven at 350 degrees Fahrenheit. Insert the baking dish in the oven and bake it for around 15 minutes.
- Take the dish out of the oven and sprinkle the chives on the top and serve hot.
