2. Chicken Puttanesca

  • 1/4 cup olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 28 oz crushed tomatoes
  • 16 oz sliced mushrooms
  • ¼ cup kalamata olives
  • 8 pitted and halved
  • 2 tablespoons capers
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 4 boneless skinless chicken breasts

Directions:

Heat oven to 375 degrees F. In a large ovenproof pot heat oil over medium-high heat, add the onions and cook until soft about 5 minutes. Add the garlic and cook another minute. Add the tomatoes, olives, capers, salt, and pepper. Stir to combine. Add chicken breasts. Bring everything to a boil stirring occasionally then cover pot and put in oven for 25 minutes or until chicken is cooked through.

3. Cheesy Tomato Soup

Ingredients:

  • 1 (28 oz) can crushed tomatoes
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon basil
  • ¼-½ teaspoon cayenne pepper
  • ½ cup sour cream
  • Salt and pepper to taste
  • 4 tablespoons butter
  • 4 tablespoons flour
  • 8 oz grated sharp cheddar cheese

Directions:

In a large saucepan over medium heat melt the butter and add the flour, whisking constantly for about 1 minute Add some of the tomato juice from the cans of tomatoes into your mixture then slowly add the rest of the juice while stirring. Add salt, pepper and basil Mix in garlic powder, onion powder and cayenne pepper. Bring to a boil then reduce heat and simmer for 5 minutes until thickened, stirring occasionally Add sour cream and cheese, stir until cheese is completely melted Return to stove top on low heat until ready to serve

4. Garlic Pasta

Ingredients:

  • 2 tablespoons chopped garlic
  • 1 tablespoon olive oil
  • 4 tablespoons butter
  • ½ cup white wine or vermouth
  • Salt and pepper to taste
  • 3 cups heavy cream
  • ½ teaspoon dried parsley
  • ¼ teaspoon red chili flakes
  • 8 oz spaghetti noodles

Directions:

In a large saucepan over medium-high heat add the olive oil and garlic, cooking for about 30 seconds Add the butter and heat until melted, about 30 seconds Add the wine and stir for a minute or so. Stir in salt and pepper and mix well Add heavy cream then reduce heat to low and simmer until thickened (about 5 minutes) When sauce has reached desired thickness add chili flakes Serve on top of spaghetti noodles
