Guide For Farmer’s Cheese
- 2 tablespoons of sour cream
- 1 gallon of whole milk, room temperature
- 35 ounce of large tub full-fat Greek Yogurt, room temperature
A Day For Preparation Of Farmer’s cheese
Preparation- Day 1
Get a large stainless steel pot, whisk the gallon of milk, sour cream and yogurt together. Cover and place it in a warm oven at 100ºF for an hour until it becomes lukewarm. Place the covered pot in a warm room for about 24 hours. As soon as it’s done, it should have the sweetened condensed milk consistency. Make sure that you do not stir it.
Preparation- Day 2
Place the mixture on the stove and heat it again over low heat for about 40 minutes, or until it is warm. Do not stir. Slowly heat it up, since a high temperature can destroy the nutritious protein. Remove from the stove and place it in a warm room for another 24 hours. The consistency needs to be that of regular yogurt.
Preparation- Day 3
On the third day, place the mixture on the stopover medium-low heat for 40 minutes, until it is hot. The cheese will separate from the way, this is called coagulation. Turn off the heat and let it sit covered for an hour, but never stir.
Now, place about 2 layers of fine mesh cheesecloth over large colander inside a large bowl. Pour in the cheese mixture through the cloth and keep the leftover liquid, store it in the fridge and use it for making any bread of your choice. Tie a knot with your cheesecloth and place a cutting board in a baking dish or in the sink in order to squeeze out excess liquid. Let it stand for 8 to 10 hours.
Preparation- Day 4
You’re on your last day of making your own Farmer’s cheese. Start by unwrapping your cheese, as it is ready to enjoy. If you’re not using it, then keep it in the fridge.
