A bowl of fruit on a plate

This healthy peanut butter fudge can help satisfy your dessert cravings. It is a rich and decadent dessert. It only needs four main ingredients, and the recipe is easy to do. It will take you about 30 minutes to make it. This fudgy recipe is high in protein and healthy fats.

All you need is the following:

  • 2 cups unsweetened coconut flakes (desiccated coconut – finely shredded)
  • 1 cup creamy-salted peanut butter
  • ½ cup coconut oil (melted)
  • 3-5 tablespoons maple syrup.
  • 1 teaspoon vanilla (optional)
  • A pinch of salt (depending on the saltiness of the peanut butter)
  • Toppings:
  • Crushed Peanuts
  • Coconut Flakes

Prepare a 9x5in loaf pan lined with parchment paper, and set aside.

Blend the desiccated coconut at high speed in a food processor until creamy in texture. It might take 4 minutes. Don’t forget to scrape down the sides.

Add the melted coconut oil and peanut butter into the creamed coconut flakes.

Gradually add the maple syrup, about a tablespoon (15ml) at a time until desired sweetness is achieved. Don’t add too much maple syrup it will make the batter thicken. If that ever happens, add a little bit more melted coconut oil to make a thinner consistency.

You can add the salt and vanilla and mix. Pour the mixture into the lined baking pan. Spread Evenly. Top with crushed peanuts or coconut flakes and cut the fudge into bit sizes.

This healthy fudge can stay in your fridge up to 10 days.
