Ystgaard of Norway’s Agricultural University began researching these cheese recipes in 1956, realizing the importance of this sort of cheese. He developed a semi-hard, medium-fat cheese with huge holes during his research, successfully merging traditional cheesemaking techniques with modern technology. The new cheese was given the name Jarlsberg Cheese after the county where the original was produced.
