What Is Tofu Made Of?

Tofu is the vegan alternative of cottage cheese, popularly known as paneer in Eastern parts of the world. It is made of soymilk. Soymilk is made of soaked soybeans blended with water. When soaked soybeans are cooked in water for some time, they result in soymilk. Tofu is made of this soymilk more or less in the same way as cottage cheese is made from dairy milk.

How To Make Soft, Smooth, And Firm Tofu?

To make perfect tofu, you have to add a coagulant to soymilk to curdle it and then perfectly extract the milk solids. Setting them properly to make the perfect block is the key. The amount of coagulant determines the quality of the tofu made, a slight difference in the quantity can lead to major failures.

Generally, magnesium chloride (nigari) or calcium sulfate (gypsum) is added to soymilk to make tofu. Still, you should be careful about the quantity as it can affect the taste.

Preparing From The Scratch

To make tofu, first, you have to make soymilk. So, what you need to do is soak around 250 gms (3 cups) of soybeans in 1 glass of water overnight. Make sure the water level is 2 inches above the soybeans. The next morning, throw away the remaining water. Put the soaked soybeans in a blender and add fresh water to it. Blend it to form a smooth flowy liquid.

Put this liquid on medium flame and let it cook. Keep stirring the milk till it becomes frothy, and you should make sure it doesn’t stick to the bottom. Cook the milk for 15 minutes and then shift it into a container with a layer of cheesecloth. Let it sit for half an hour, and you will find smooth soymilk in the container with the foam as residue on the cheesecloth. Put that milk on the flame again. For the best results, you can use this perfect cheesecloth.

Keeping the flame low, add ¼ tsp of the coagulant and stir the mixture. After one boil, if you don’t find any change, add ¼ tsp of the coagulant again and let it boil. Keep stirring. After another boil, you may find foam in the milk, and the color will turn slightly yellow. This is the right time to take off your milk from the flame.

Final Stage

If you don’t see the milk curdling, you can use the remaining coagulant part by part, or else ½ tsp will be enough. Once you get the curd from the milk, separate the solid and liquid part with the help of a large stainer. Collect the solid curd and put it on the cheesecloth. Wrap the cloth around and make a sack. Put this sack in a container with some weight on it. Leave it aside for some time.

After a while, the remaining liquid will ooze out because of weight, and you will have a freshly prepared tofu with you. You can refrigerate it to make it firm, or you may use it right away. So, enjoy your tofu and share your experience with us.
